Yoghurt Coronation Chicken

Serves: 4

Ingredients

2 big handfuls of leftover shredded roast chicken
4 heaped tbsps of thick Greek strained yoghurt
2 tsps medium curry powder
1/2 tsp of turmeric
2 tbsps mango chutney
Handful of toasted flaked almonds
4 finely chopped spring onions

Steps

1. In a bowl, place the yoghurt and salt and mix together. Add the mango chutney, turmeric, curry powder and plenty of seasoning. Mix together.

2. Add the flaked almonds, spring onions and sauce to the shredded chicken and mix it all together.

3. Serve warm, room temp or cold with pickled red onions, coriander and more toasted almonds.
